Domaine Manuel Olivier
This Hautes-Côtes-de-Nuits from Domaine Manuel Olivier is a white Burgundy wine, made from 100 % Chardonnay variety. The vines are 15 years old and the terroir is east-southeast oriented on clay-limestone soil 20 cm deep. Half of the fermentation takes place in stainless steel and oak barrels, 15 % of which are new barrels. The same for aging, where this white Hautes-Côtes-de-Nuits spends 16 months in barrels on fine yeasts and in barrels where the wine is then stirred.
