This is a fresh wine with notes of pineapple apple, with a subtle hint of oak and a hint of mango and ginger. Delicious on its own or with all fish and white meat dishes. Goes well with oriental dishes
Sourced from selected vineyards in the Carcassonne and Minervois area, where clay and limestone soils predominate, with grapes picked for taste and yield. The wines are produced and bottled in collaboration with Celliers Jean d'Alibert. The grapes are cold macerated and then pressed, after which they were cold settled before fermentation. 30% of the Chardonnay was fermented in French and American oak barrels and remained on the lees in barrels for 6 months, with some stirring. They wanted to create a Chardonnay that was satisfying yet fresh and had enough interesting flavor to capture the imagination. From the start, it was crucial that it would also be a good addition to dishes
Jean d'Alibert was appointed Abbot of Caunes-Minervois by King Henri IV in 1598. Abbot Jean d'Alibert had an original entrepreneurial activity, both for the monastery and for the economy of the region. It was he who made famous the marble quarry of Caunes Minervois, the most beautiful pieces of which adorn the most important monuments of the world (Italy, Versailles, Arabian Peninsula). Abbot Jean d'Alibert allowed the global influence of local products, and we continue to do this by exporting the wine of our terroir around the world.
