Tasting note:
Prima Nature is a range of organic wines without added sulphites that offer particularly pure, generous and gastronomic aromas. Each cuvée, whose composition has been reduced to the essentials, expresses the character and flavor of the fruit and the terroir.
The work begins in the vineyard with an accurate and meticulous selection of the plots most suitable to produce this type of wine (90% of the final result is the result of this precision work): the sanitary condition must be perfect, the foliage must be healthy, fresh and dense, and the grapes must be optimally ripe. The harvest window is very small, as the acid/sugar balance is essential for this wine category. The vinification is very complex because we do not use sulfur or oenological inputs. The grapes are immediately pressed and cold settled to promote natural stabilization of the oxidizable compounds in the must through precipitation. The alcoholic fermentation then proceeds quickly and takes place in a neutralized atmosphere. The fermentation temperature is controlled at 18°C. The wine is clarified by steeping before malolactic fermentation, then covered again and kept cold. The wine is bottled early in the year to preserve its aromatic expression. The wine is aged in the bottle.
