PRODUCTION ZONE
These grapes come from the Ravera vineyard in Novello at an altitude of 360 m above sea level, the soil is marl - calcareous with a tendency to clay, with good permeability. The vineyard has a very good south-facing position.
TRAINING SYSTEM AND VINEYARDS
The vineyard is composed of Nebbiolo (Michet, Lampia and Rosè) with Italian clone material. The training system is Guyot with 4,700 plants per hectare.
TECHNOLOGICAL LISTINGS
The winemaking process is in the traditional way, with "rimontaggi en follatura" taking place over 25 days, i.e. the must is pumped over the cap several times a day to prevent it from drying out, and the cap is also broken mechanically. This is done at a temperature of 30 °C to optimize the extraction. The wine is then drained and left in steel barrels for 2 months and then aged in oak barrels for 30 months. CHARACTERISTICS
A ruby red color with amaranth reflexes, a clear perception of good fruit appeals to the nose. Hints of herbs and roses. Full body, fine tannins and a delicious aftertaste. FOOD PAIRING
Exceptional with game, red meat in general, stewed and roasted. Excellent meditation wine. After a few years of aging, the combination with dark chocolate and cocoa-based sweets is very interesting.
