Sant Urbano
The Sant'Urbano vineyard, 19 hectares in size, is located in the municipality of Fumane. The vineyard is located at an altitude ranging between 280-350 meters. The soil is volcanic, calcareous clay. The vines were planted in the mid-1990s. The harvest is carried out entirely manually at the end of September, with a careful selection of the best grapes. These grapes are then dried in room temperature conditions for a period of 22 days. This drying process is the same as the Amarone, but takes much shorter, so the grapes dry less.
At the end of October, the dried grapes are placed in steel barrels for the first fermentation. This is done under a controlled temperature of 20° -24° C for 8 days. The further ginning process takes place in large cement tanks. The wine then matures for another 18 months in oak barrels before being bottled.
