Refined and easy to please wine! It is a pleasant, light refreshing red variety. A bit like a super-sleek Gamay or Pinot Noir! Classic aromas of sour cranberry and red berries on the nose, followed by fresh acidity and nonchalant structure.
The Vallon de Marcillac is located in the heart of Aveyron, a department of the Occitan region, structured by rocky plateaus and clay-limestone soil. The Marcillac vineyard consists of 2 well-identified terroirs: A terroir consisting of red clay hills (the blushers) , where the Domaine du Cros is located.
Further east, towards Salles-la-source, lies a terroir consisting of high rocky plateaus and white clay-limestone soil: the Causse Comtal. With only 220 hectares exploited (out of an original area of 4000 hectares), the current area of the AOC is one of the smallest appellations in France.
In total, the vineyard has about fifteen harvesters and bottlers, including Philippe and Julien Teulier, the owners of Domaine du Cros.
The wines of Domaine du Cros are made from a rare grape variety from the southwestern vineyards, and especially from Marcillac, of which it is the 100% exclusive grape variety: Fer Servadou (also called “Mansois” in the Aveyron). One of the oldest grape varieties in the southwest. The term iron comes from the Greek ferrus, meaning 'wild'. The term Servadou means “that is preserved over time” (as opposed to grape varieties that rot once they reach maturity), with a very good resistance of the bunches to winter.
Fer Servadou is therefore an old grape variety of wild origin, a grape variety that was also very present on the roads of Saint-Jacques de Compostela.
