Domaine Pavelot winemaker in Burgundy

The Pavelot family, grape growers and winemakers, are well rooted in Pernand-Vergelesses. Luc and Lise are the seventh generation, after their parents Régis and Annie, who followed Maurice and Gladie, but also previous generations: Léon and Clémentine, Antoine and Ursule. Today, the brother-sister couple works to uphold the family tradition and winemaking heritage of those who came before them on their 10 hectares (22 acres) of vineyards.

In the lineage of generations of winemakers transforming the earth into wine, several tasks mark our seasons in guiding the vine. Patience and respect for the living: the plants, the soil, the insects, the animals and the people guide our way no less. On the geological scale of our planet, we are fortunate to live these values ​​in our hands and it is up to us to take their measure, with respect for the well-being  all the work in the domain and for the pleasure of everyone who enjoys it. enjoy our wines.

Philosophy

Between our commitment to traditional farming methods and modernizing the means of production, we are moving quietly forward in this world where stability and balance must be forever redefined. This is why, through organic and biodynamic agriculture, we give our plots and our plants the essentials so that they produce good fruits, in good health, in balance, consistently, for the earth and for us.

Each generation of the family has given great respect and attention to the land and to our plants, given what was available to them in both human and material resources. As such, our oldest vines have peacefully reached 90 years... This is the result of the will and perseverance to build, brick by brick, season after season, a domain that is vibrant and produces wines that are appreciated and can be passed on to the next generation.

After each harvest a new year begins, with its worries but also with its satisfaction. However, our work remains the same and is renewed every year, just like the wines, year after year. It takes time and patience before we can reap the fruits of our efforts. It is a methodical process that requires consultation and listening. With the efforts of the entire team, we build every day.

The Wines

When preparing our wines, we try to be as simple and accurate as possible and only intervene when necessary and at the right time. Every year a new reflection is required, given the new challenges that the wine harvest brings.

The vinifications take place in a unique way under the action of indigenous yeasts, without abuse of technology or oenological irritants. We use sulfur during vinification and at the end of malolactic fermentation. However, to optimize these necessary additions, we adhere to the lunar calendar to minimize doses and thus reduce their impact on the wines and on the consumer. Our biodynamic practices are fundamental to create a healthy and living wine for the pleasure of the wine lover and to obtain an expression of each appellation in harmony with the vintage, without excessive elaboration in the cellar.
